Copp has hit five goals in three games since returning to his former club from Ilfracombe Town.
Appledore controlled possession against the Students but struggled to create chances until Copp struck from close range on 56 minutes.
The forward fired home a low left-footed shot to double the advantage and completed his treble with a penalty in stoppage time.
With three wins and a draw from their first four games, Appledore remain fourth in the table.
